Why does the math flip when converting L/100km to km/L?

Because they measure opposite physical relationships. km/L measures how much 'Distance' you can get out of a fixed 'Volume' of fuel. L/100km measures how much 'Volume' you burn across a fixed 'Distance'. To bridge them, the mathematical engine must use an inverse divisor (dividing by a constant rather than multiplying) to prevent errors.

Is a UK Gallon the same as a US Gallon?

No. The US Liquid Gallon equals exactly 3.7854 liters. The UK Imperial Gallon is roughly 20% larger, equaling exactly 4.54609 liters. Because the UK gallon contains more physical fuel, an engine rated at 40 UK MPG will output a significantly lower number when calculated in US MPG.
